A Waverly restaurant has been cited for an abnormally high amount of critical violations, according to the Waterloo Cedar Falls Courier. Sasquatch Jack’s was cited for 10 violations during a February 17th inspection. Inspectors found chicken stored above whole muscle beef creating a risk for cross contamination and a box of frozen chips were found uncovered in a freezer. Soups and sauces were found at 100 degrees, well shy of the required 165 degrees. Raw onions and containers of raw chicken had no date markings, multiple items in the coolers were held past the seven day maximum, with some held more than 12 days. There was no detectable amount of sanitizing solution being used in the three compartment sink and the presence of insects was noted in the dry storage area. The freezers and coolers were said to be heavily soiled and the most recent inspection report had not been posted for customers to read.
A follow up inspection was done on February 21st and all ten violations were found to be corrected.
